Judy's Pico de Gallo and Guacamole
This past weekend Gary and Maude stopped by the house, and Judy made her Pico de Gallo, (or should that be Gallow), and Guacamole. It's incredible stuff. I can't eat Pico de Gallo without thinking of the song that our children used to listen to when we were kids. It was by "Trout Fishing in America", which I think is one of the funniest children bands.
Judy's Pico de Gallow
2 cups tomatoes cut into 3/8 inch pieces
2 tablespoons chopped cilantro
1/2 cup white onions, also diced
1 1/2 tablespoons miniced jalapeno. She uses rubber gloves when she cuts these. Take out the seeds
1/2 teaspoon salt
2 teaspoons freshly squeezed lime juice.
Judy's Guacamole
Believe it or not, she doesn't have a recipe for this. She just combines various amounts of avacodos, garlic, lime juice, tomatoes, cilantro, and salt to taste. She does it the best.

I never knew what was in guacamole besides avacodos. I've only ever bought it or had it in a restaurant.
